Nature at the heart of Les Belles Perdrix restaurant, Saint-Emilion

At Les Belles Perdrix, with a coveted Green Michelin star to its name, nature is all around. The vines provide a luxuriant yet soothing backdrop and unique panoramic vista.

The food celebrates the home-grown produce from the estate’s extensive, 6,800m2 permaculture kitchen garden, which for Chef David Charrier, is both an inspiration and a prized resource.

Les Belles Perdrix restaurant favours local, seasonal suppliers and 90% of the meticulously selected supply base is located less than 30 minutes from the restaurant.

Our environmentally-conscious endeavours are part of the kitchen and restaurant day-to-day, notably in managing energy and waste consumption. Any organic waste generated on the estate is ably managed by our resident pigs and chickens.

    Pastry chef at our Saint-Emilion restaurant and a coveted ‘Passion Dessert’ mention in the Michelin Guide to his name for outstanding contribution to desserts, Adrien Salavert champions taste and simplicity. His desserts are low in sugar and focus on creativity and rare technical acumen, with the emphasis on flavour, finesse and ultra-fresh ingredients selected with care. Examples of his creative flair are also available at La Petite Perdrix bakery in the village of Saint-Emilion.
