Cuisine et Vins de France - Art de vivre at Saint-Emilion

In this article from Cuisine et Vins de France, published in August 2025, Sophie Menut Yovanovitch describes the French art de vivre through the Hospitality Offer at Troplong Mondot, summarized here in a few striking extracts.

“While the vibrations of the château's past can still be felt, the team, led by Aymeric, is working to make it not only a wine estate but also a welcoming place firmly rooted in the present, where Michelin-starred cuisine, rooms, and living spaces contribute to a complete stay in the atmosphere of a beautiful country house.”

Château Troplong Mondot

The backstory - Located at the highest point of Saint-Emilion, Château Troplong Mondot [...] covers 43 hectares in a single block and invites travelers to enjoy an epicurean break. Built in the 18th century by Abbé Raymond de Sèze around the existing vineyard, it belonged to the Valette family for many years before being sold to the SCOR group (the world's fourth-largest reinsurer). The latter entrusted its management to Aymeric de Gironde. [...]

Chambre Edouard

The rooms - The main building where the Valette family once lived was converted, completely renovated, and designed as a large family home in 2019. It offers three bedrooms and suites, each with its own unique style. Opposite, the small Maison des Vignes, with its living room and two bedrooms, perfectly integrated along the rows of vines, is available for rent as a whole.

Restaurant Belles Perdrix

Michelin-starred cuisine - Les Belles Perdrix restaurant presents the cuisine of chef David Charrier. After renovations, he had to start from scratch to create a sensitive cuisine, as close to nature as possible, which earned him back the Michelin star he had lost after closing. The chicken coop and two permaculture vegetable gardens help him find inspiration. [...]

Exclusive tours - As soon as we arrive, we drop off our luggage, leave the laziest among us by the pool, and set off in a Land Rover to visit the estate. We make a few stops to admire the 360° view and the small town in the distance that gives its name to the appellation. We watch the work in the vineyard, visit the vat room, and, during the harvest period, taste the berries and wines in fermentation... [...]

Wines - The estate's strength lies in its blending, which brings out the characteristics of the plots and the unique terroir of Saint-Emilion. This can be felt when tasting the powerful and charming 2015 vintage, the extremely refined and lively 2018, the delicate 2019 with its floral notes, the fruity, crisp and deep 2020, and finally the crisp, mouthwatering and juicy 2021.
