Chef David Charrier
If you were…
An energy? | The adrenaline of a gunshot when launching the shift.
An event? | The Olympic Games for the atmosphere, both as rigorous and effervescent as that of a shift. Cooking is a team sport in which I progressively lead my team through the discovery of new techniques.
A destination? | Anywhere! I make use of my experiences and my encounters in order to achieve my type of cooking.
A sensation? | Everything apart the cold, which puts aromas to sleep.
A feeling? | The joy of creating shared memories over a genuine meal.
A place? | The terrace of ‘Belles Perdrix’, from where we can admire the vineyard in full action and the light changing according to the time of day.
An intention? | To choose my produce and work towards revealing the true richness of its flavours.
A privilege? | To be free, to be myself in a place that resembles me.
